今回は夏の食材、なすを味噌で炒める!

材料 3人分
具材
茄子:3本
ピーマン:2個
しめじ ひとつかみ
サラダ油:大さじ1
ごま油:少々(仕上げ用)
合わせ調味料
砂糖:大さじ1
味噌:大さじ1
みりん:大さじ1
酒:大さじ1
醤油:小さじ1
おろし生姜:小さじ1(チューブもOK)
作り方
調味料を準備
調味料を全てボウルに合わせておく
野菜をカットする
茄子は乱切り、ピーマンは一口大に切る。
野菜を炒める
フライパンに油を熱し、茄子を焼く(中火で皮目からしっかりと火を通す)
茄子がしんなりしたらピーマン、しめじを加え、軽く炒める。調味料をフライパンへ
先に準備した、合わせ調味料を熱いフライパンに一気に加えて炒め絡める
(このタイミングでそれぞれの調味料を計量しながら入れると味が変わってしまう)仕上げ
仕上げにごま油をひと回しして風味をつければ完成。
お皿に盛り付けて白米と一緒にどうぞ!
デザートは、大好きな「いちじく」甘い!

When I saw that deep, almost angry red sun icon on the weather forecast (yes, that means sunny), I couldn’t help but sigh. Even in Hokkaido, they’re saying you need air conditioning—can you believe that?
Where can we even escape to for cooler weather anymore? Maybe I should count how many times I’ve posted the word “HOT” this summer before it ends!
Anyway, today’s recipe features one of summer’s star ingredients—eggplant—stir-fried with a savory miso sauce.
Stir-Fried Eggplant with Miso
The key to this dish? Have your sauce mixed and ready beforehand. That way, once your veggies are nicely cooked in a hot pan, you can toss in the sauce all at once for the best flavor.
Ingredients (Serves 3)
Veggies:
- 3 eggplants
- 2 green peppers
- A handful of shimeji mushrooms
- 1 tbsp vegetable oil
- A drizzle of sesame oil (for finishing)
Sauce:
- 1 tbsp sugar
- 1 tbsp miso
- 1 tbsp mirin
- 1 tbsp sake
- 1 tsp soy sauce
- 1 tsp grated ginger (tube ginger is fine!)
How to Make It:
- Mix the sauce:
Combine all the sauce ingredients in a bowl and set aside. - Prep the veggies:
Roughly chop the eggplants and cut the green peppers into bite-sized pieces. - Stir-fry the veggies:
Heat the vegetable oil in a pan, then cook the eggplant skin-side down over medium heat until soft and golden.
Add the green peppers and mushrooms, giving them a quick stir-fry. - Add the sauce:
Pour in your pre-mixed sauce all at once. Stir everything together to coat the veggies evenly. (Don’t measure and add the sauce ingredients one by one at this stage—the balance of flavors will be off!) - Finish it off:
Drizzle a little sesame oil over everything at the end for extra aroma.
Serve it up with a bowl of hot white rice!
And for dessert? I’m treating myself to my favorite—fresh figs.
