粉の配合_ 小麦粉(薄力粉) : 片栗粉
- 小麦粉多め(3:1)→ ふんわり&ややもっちり(バランス型)
- 半々(1:1) → もちもち感が強くなる(やや弾力強め)
- 片栗粉多め(1:2など) → もちもちを通り越して「団子」っぽい食感になることも
3人分の材料
- 小麦粉(薄力粉)…150g
- 片栗粉…45g
- 和風顆粒だし 小さじ1
- 水…180ml
- 卵…3個
具材(お好きなものを)
- キャベツ
- ズッキーニ
- 長ネギ
- 豚肉
- サラダ油
- ソース
- マヨネーズ
- 青のり
作り方
野菜をカット
キャベツはザクギリに、ズッキーニ は半月薄切りに。長ネギは小口切り
具材入りの生地を作る
卵と水をボウルに入れて混ぜて小麦粉、片栗粉、和風顆粒だしを入れ混ぜる。その後、具材を入れてざっくりと混ぜる。
焼く
フライパンを熱してから、具入り生地を流して両面焼く。

I was craving okonomiyaki the other day, but realized I was out of nagaimo (Japanese yam)—a key ingredient for that soft, gooey texture. So, I did a little digging and found that you can still make a delicious version by blending regular flour and potato starch in the right ratio!
Flour to Potato Starch Ratios (All-Purpose or Cake Flour : Potato Starch)
- More flour (3:1) → Fluffy with a slight chewiness (well-balanced)
- Equal parts (1:1) → Very chewy and elastic
- More starch (1:2 or more) → Turns out more like a dumpling than a pancake—super dense and chewy!
My Go-To Mix (for 3 servings):
- Flour (cake or all-purpose) – 150g
- Potato starch – 45g
- Japanese soup stock granules (dashi powder) – 1 tsp
- Water – 180ml
- Eggs – 3
Toppings & Fillings (go with what you love!):
- Cabbage
- Zucchini
- Green onion
- Sliced pork
- Salad oil (for cooking)
- Okonomiyaki sauce
- Mayonnaise
- Aonori (dried seaweed flakes)
How to Make It:
- Prep your veggies
Roughly chop the cabbage, thinly slice zucchini into half-moons, and finely chop the green onion. - Mix up the batter
In a bowl, whisk together eggs and water. Add the flour, potato starch, and dashi powder, and mix until combined. Then toss in your chopped veggies and give it a quick mix. - Cook it up
Heat a frying pan with a little oil, pour in the batter with all the fillings, and cook until golden brown on both sides.
