さて、今回は、旬の柿を使って、主菜を作ります。柿はモッツァレラと一緒にオリーブオイルと塩でいただくのも良いのですが、炒めると甘くなる。味噌との相性もよいです。是非週末あたりいかが?
材料 (3人分)
豚こま切れ肉 … 250g
柿 … 1と1/2個(やや固めが扱いやすい)
玉ねぎ … 1/2個(薄切り)
サラダ油 … 小さじ2
●調味料
味噌 大さじ1と1/2
みりん … 大さじ1と1/2
しょうゆ … 小さじ1と1/2
作り方
1. 下準備
玉ねぎは薄切り、柿は皮をむいて一口大に切る。調味料は全てあらかじめ混ぜておく。
2. 炒める
フライパンに油を熱し、中火で豚肉を炒める。色が変わったら玉ねぎを加え、しんなりするまで炒める。
3. 仕上げ
火を少し弱めて柿を加え、さっと1分ほど炒める。調味料を加えて全体にからめ、照りが出たら完成。
柿は火を通しすぎると崩れるので最後にサッと加えるのがコツ。

While they’re lovely with mozzarella, a drizzle of olive oil, and a pinch of salt, they really shine when cooked. They get sweeter, softer, and guess what? They’re amazing with miso.

Sweet & Savory Stir-Fry: Pork and Persimmons with Miso
Serves 3
You’ll need:
- 250g thinly sliced pork (any kind you like for stir-frying)
- 1½ firm persimmons (firmer ones are easier to cut and cook)
- ½ onion, thinly sliced
- 2 tsp vegetable oil
Sauce mix:
- 1½ tbsp miso
- 1½ tbsp mirin
- 1½ tsp soy sauce
Let’s Cook!
1. Prep Time!
Peel the persimmons and chop them into bite-sized pieces. Slice the onion. Stir all the sauce ingredients together in a small bowl—easy!
2. Sizzle Time!
Heat up your oil in a frying pan over medium heat. Toss in the pork and cook it until it starts to brown. Then add the onion and stir until it softens.
3. Fruit Finale!
Lower the heat a bit, throw in the persimmons, and give them a quick stir—about a minute. Then pour in your sauce, coat everything well, and cook until it’s glossy and delicious.
TIPS : Don’t let the persimmons overcook—they’re delicate! Add them at the end to keep them juicy and intact.
