
果物をメイン料理に入れる料理投稿が続きます。今回は鶏もも肉とリンゴの甘辛煮。
鶏皮から出る脂を適度に除くこと、りんごの消化を助ける成分と、甘味を玉ねぎやりんごの甘さを生かすことでとっても食べやすい煮込みができました。
材料 (3人分)
鶏もも肉 450g (ひと口サイズに切る)
りんご 1.5 個 (皮ごとくし切りにして半分に切る)
玉ねぎ 1個 (薄切りに)
にんにく 1片 (みじん切り)
油 (大さじ1)
調味料
しょうゆ 大さじ2.5
みりん 大さじ1.5
酒 大さじ1.5
はちみつ 小さじ2
水 80ml

作り方
鶏もも肉はひと口大に切り、軽く塩コショウをする
りんごは皮の表面を塩でこすり洗いをして、皮ごと、くし切りにして半分に切る
玉ねぎは薄切りに。にんにくはみじん切りに
フライパンに油を入れて、鶏肉を皮目から中火でしっかりと焼く。
鶏皮から出た脂がたまるのでキッチンペーパーで1/2 - 1/3ほど吸い取る
みじん切りのにんにくを加えて軽く炒めて香りを出す。
玉ねぎを加えて、しんなり透明になるまで炒める。
りんごを加えて1-2分軽く炒めて香りを引き出す
調味料を全て加えて、強火で煮立てる。その後、弱火にして7-8分フタをして煮込む
りんごが軽くやわらかくなって煮汁照りが出れば完成

Sweet and Savory Chicken with Apples – A Comforting Fall Dish
Lately, I’ve been on a bit of a fruit-in-main-dish kick, and today’s recipe is another delicious addition to that series: Tender chicken thighs simmered with apples in a sweet and savory sauce.
This cozy dish balances flavors beautifully—thanks to the natural sweetness of onions and apples, there’s no need to overdo it with sugar. Plus, the digestive benefits of apples make this not just tasty, but gentle on the stomach too.
One important tip: don’t forget to remove some of the fat that renders from the chicken skin while cooking. It keeps the dish light and lets the other flavors shine through.
Ingredients (Serves 3)
- 450g boneless chicken thighs, cut into bite-sized pieces
- 1½ apples (keep the peel on, cut into wedges, then halved)
- 1 onion (thinly sliced)
- 1 clove garlic (minced)
- 1 tbsp cooking oil
Seasoning
- 2½ tbsp soy sauce
- 1½ tbsp mirin
- 1½ tbsp sake
- 2 tsp honey
- 80ml water
How to Make It
- Lightly season the chicken pieces with salt and pepper.
- Wash the apples by scrubbing the skin with salt, then slice into wedges and halve.
- Heat oil in a frying pan and place the chicken skin-side down. Cook over medium heat until nicely browned.
- Once the fat from the chicken skin has rendered out, use a paper towel to soak up about half to a third of it.
- Add the minced garlic and sauté briefly until fragrant.
- Toss in the onions and cook until soft and translucent.
- Add the apple slices and stir-fry for 1–2 minutes to bring out their aroma.
- Pour in the seasonings and bring to a boil over high heat. Then cover and simmer over low heat for 7–8 minutes.
- Once the apples are tender and the sauce has thickened with a nice glossy finish, it’s ready to serve.
