
自宅から自転車で15分ほど行ったところの大型スーパーは、いつも行くスーパーとはまったく異なりワタシ好みの品揃え。テンションが上がるので雨が降らなければ遠征しにいきます。しかも安い。
今夜はスペアリブよ!
今回はママレードを使う。通常休日の夕食開始は18時くらい。今、16時。あまり時間がないので圧力鍋を使って煮込みます。

材料
スペアリブ 700g位
• ママレード:大さじ5
• 醤油:大さじ2
• 酒:大さじ2
• にんにく(すりおろし):15cmくらいギュッと
• 生姜(すりおろし):15cmくらいギュッと
• 水:100ml
• 塩・こしょう:少々
オリーブオイル:少々
作り方
スペアリブに塩とコショウを振って10分程度置き、余分な水分をペーパーで拭いて、オリーブオイルを引いた熱いフライパンで全面に焼き色をつける。
その間に、たれの材料をボウルに合わせておく。
スペアリブに焼き色がつく程度火を通したら、電気圧力鍋にスペアリブとタレを入れて加圧。
圧力モード 18-25分にセット。あとは調理が終わって圧が抜けるまで放置すれば完成。

Craving a Big Chunk of Meat on My Day Off
There’s just something about a day off that makes me want to dig into a hearty cut of meat.
About 15 minutes by bike from my house, there’s a big supermarket that’s totally different from my usual go-to. It’s got a selection that’s so me—I seriously get excited just walking in. And the prices? Super reasonable. So unless it’s pouring rain, I’ll happily make the trip.
Tonight’s dinner? Spare ribs!
I’m braising them with marmalade this time—yes, you read that right. It’s one of those sweet-savory combos that just works.
We usually start dinner around 6 PM on weekends. Right now, it’s already 4, so I’m short on time. That means it’s time to call in my trusty pressure cooker!
Let’s do this!
Ingredients
- About 700g spare ribs
- 5 tbsp marmalade
- 2 tbsp soy sauce
- 2 tbsp sake
- About 15cm of grated garlic (a generous squeeze)
- About 15cm of grated ginger (same as above)
- 100ml water
- Salt & pepper to taste
- A little olive oil
Instructions
- Sprinkle the spare ribs with salt and pepper and let them sit for about 10 minutes. Pat off any excess moisture with paper towels.
- Heat a pan with a bit of olive oil and sear the ribs on all sides until nicely browned.
- While the ribs are browning, mix all the sauce ingredients together in a bowl.
- Once the ribs are seared, transfer them to an electric pressure cooker along with the sauce. Set it to pressure mode for 18–25 minutes.
- When the cooking time is up, let the pressure release naturally—and you’re done!
