こんにゃくの味噌田楽 #あと一品 #腸活

腸活・ダイエット・血糖コントロールに強い食材のこんにゃく。
昔、祖母によく作ってもらった味噌田楽を作る。 意外と簡単なの。

材料

こんにゃく 1枚

味噌ダレ
• 味噌 大さじ2
• 砂糖 大さじ2
• みりん 大さじ1
• 酒 大さじ1

楊枝 数本

作り方

味噌ダレを作る
1. 材料を全て小鍋に入れて混ぜる
2. 弱〜中火で2〜3分加熱
3. とろっとしたら完成
    甘くコクのある味噌だれになる

こんにゃくの下処理
切る(味しみUP)
三角・四角など食べやすくカット
表面に浅く格子の切り込みを入れる
👉 味噌がよく絡む

塩もみ(臭み抜き)
塩 小さじ1を全体にまぶし1〜2分もみこむ
👉 アク・独特のにおいが抜ける

下ゆで(最重要)
沸騰したお湯で 2〜3分ゆでる
👉臭みが抜け余分な水分が抜け味が入りやすい

水気をふく
キッチンペーパーで軽く押さえる
👉 味噌がしっかりのる

楊枝を刺すと食べやすい
味噌ダレをつけて召し上がれ

Translation

Konjac is one of those amazing foods that supports gut health, helps with dieting, and keeps your blood sugar stable. It’s been getting more attention lately, but for me, it brings back a sense of nostalgia—my grandmother used to make miso dengaku all the time. The best part? It’s actually much easier to make than you might think.

Ingredients

  • 1 block of konjac

Miso sauce:

  • 2 tbsp miso
  • 2 tbsp sugar
  • 1 tbsp mirin
  • 1 tbsp sake
  • A few toothpicks

Instructions

1. Make the miso sauce
In a small saucepan, combine all the sauce ingredients and mix well.
Heat over low to medium heat for 2–3 minutes, stirring gently.
Once it thickens to a smooth, slightly sticky texture, it’s ready.
You’ll get a rich, sweet, and savory miso glaze.

2. Prepare the konjac

Cut it (for better flavor absorption)
Slice into bite-sized pieces—triangles or squares work great.
Lightly score the surface in a crisscross pattern.
→ This helps the miso sauce cling better.

Rub with salt (to remove odor)
Sprinkle 1 teaspoon of salt over the konjac and gently rub for 1–2 minutes.
→ This removes any bitterness and that distinct konjac smell.

Parboil (this step is key!)
Boil in water for 2–3 minutes.
→ This further removes odor and excess moisture, allowing the flavor to soak in better.

Pat dry
Lightly press with a paper towel.
→ Helps the miso glaze stick nicely.

Stick toothpicks into each piece for easy serving, coat generously with the miso sauce, and enjoy. Simple, comforting, and full of goodness—just like the dishes we remember from home.
