
大好きなクラフティ。
製菓材料店でダークチェリー缶を見つけたのでうれしくて即買い。
クラフティはフランス生まれの果肉入り焼きプリンのようなお菓子。
簡単レシピなので是非作ってみてください。
材料 18cm型
ダークチェリー缶 1缶
卵 2個
砂糖 35g (缶のシロップが甘かったので少なめ)
薄力粉 40g
牛乳 180g
生クリーム 70ml
塩 ひとつまみ
キルシュ 大さじ1
バター(適量) 耐熱皿に塗る

このダークチェリー缶は枝も種も取り除いてあるので開封したらすぐに使えて便利。
作り方
クラフティ
チェリーの水気をしっかり切る
缶汁と実を分ける。 汁はシロップにするので捨てないでね。

耐熱皿に薄くバターを塗ってチェリーを並べる
(ちなみにこのパイ皿はこびりつかないのでバターは塗りません)

オーブンを180度に予熱を入れる
ボウルに卵、砂糖、塩を入れて、泡立て器でよく混ぜる。
小麦粉を振るい入れて、粉っぽさがなくなるまで混ぜる。
牛乳、生クリーム、キルシュを順に加えて混ぜる。
生地を一度こし、チェリーを並べた耐熱皿に静かに注ぐ
(卵液が余ってしまったら別の耐熱皿を用意して一緒に焼いちゃいましょう)
180度、35-40分オーブンで焼く
中央がふっくら膨らんで、竹串を刺して液体状の生地がつかなければ完成。
粗熱が取れたら冷蔵庫で冷やすとプリンのように締まって翌日も美味しくいただけます。

シロップと実を分けた後のシロップはキルシュを入れてソースにしましょう。クラフティにかけたり、ヨーグルトに混ぜたり使えます。
チェリーシロップのキルシュソース
ダークチェリー缶のシロップ 150ml〜
レモン汁 小さじ1-2
キルシュワッサー 小さじ1-2
小鍋にチェリーシロップとレモン汁を入れて中火にかける
沸いたら弱めの中火、7-10分程度煮詰める

量が半分くらいになって、スプーンの背に薄く残る程度になったら火を止める
粗熱が取れたらキルシュワッサーを加える

クラフティは焼き上がりから30分-1時間くらいおいたほうがおすすめ。
冷蔵庫で冷やしても美味しい。

Cherry Clafoutis (French Baked Custard with Dark Cherries)
I’ve wanted to make a clafoutis for the longest time.
The other day I spotted a can of dark cherries at my local baking supply store and was so excited that I bought it immediately!
Clafoutis is a classic French dessert—somewhere between a baked custard and a pudding, with plenty of fruit baked right into it.
It’s surprisingly easy to make, so I hope you’ll give it a try!
Ingredients (18cm / 7-inch baking dish)
- 1 can dark cherries, drained
- 2 eggs
- 35g sugar (I reduced the sugar because the cherries were packed in a sweet syrup.)
- 40g cake flour (or all-purpose flour)
- 180ml milk
- 70ml heavy cream
- A pinch of salt
- 1 tbsp kirsch (Kirschwasser)
- Butter, for greasing the baking dish
The canned dark cherries I used were already pitted and stemmed, so they were ready to use straight from the can. Super convenient!
Instructions
Make the Clafoutis
Drain the cherries well, separating the fruit from the syrup.
Don’t throw away the syrup! We’ll use it later to make a delicious cherry sauce.
Grease your baking dish lightly with butter and arrange the cherries in a single layer.
(My pie dish has a non-stick coating, so I skipped the butter.)
Preheat your oven to 180°C (350°F).
In a large bowl, whisk together the eggs, sugar, and salt until well combined.
Sift in the flour and whisk until smooth with no dry flour remaining.
Gradually whisk in the milk, heavy cream, and kirsch until the batter is silky smooth.
For an extra-smooth texture, strain the batter through a fine-mesh sieve before pouring it gently over the cherries.
Bake at 180°C (350°F) for 35–40 minutes.
The clafoutis is done when the center is puffed up and a skewer inserted into the middle comes out without any runny batter.
Let it cool slightly, then chill it in the refrigerator if you like. Once cold, the custard becomes firmer—almost like a baked pudding—and it’s just as delicious, if not better, the next day.
Cherry Kirsch Syrup
Don’t waste the syrup from the canned cherries! It makes a wonderful sauce for the clafoutis and is also delicious stirred into yogurt.
Ingredients
- 150ml (or more) cherry syrup from the can
- 1–2 tsp lemon juice
- 1–2 tsp kirsch (Kirschwasser)
Instructions
Combine the cherry syrup and lemon juice in a small saucepan over medium heat.
Once it comes to a boil, reduce to medium-low and simmer for 7–10 minutes.
When the syrup has reduced by about half and lightly coats the back of a spoon, remove it from the heat.
Let it cool slightly, then stir in the kirsch.
Serving Tips
I recommend letting the clafoutis rest for 30 minutes to an hour after baking before serving.
It’s wonderful at room temperature, but I personally love it chilled straight from the refrigerator, too.
